Ingredients
  • 2 cups macaroni
  • 1 tablespoon butter
  • 2 cups common mushrooms
  • 3 ounces ham (Black Forest or Parma)
  • 2 cups Parmesan
  • 1 leek
  • 5 tablespoons tomato paste
  • 5 tablespoons sherry
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 0.5 teaspoons nutmeg
Preparation

Then add sherry and let it simmer for a few minutes. Before you drain the pasta, scoop out 5 tablespoons of the pasta water and add it to the sauce. Everything goes into the pan except for a handful of Parmesan (for serving).
