Anleitung
Vorbereiten der Zutaten: Eier, Senf, Salz, Zitrone
Trenne das Eigelb vom Eiweiß. Letzteres kannst du beiseite stellen. Presse die erforderliche Menge Zitronensaft aus.
Gib Senf und Salz zu dem Eigelb.Zusammenrühren der Zutaten: Raps- oder Sonnenblumenöl, Eigelb, Pfeffer, Zitronensaft, schwarzes Trüffelöl
Nimm einen Schneebesen und rühre damit das Eigelb schnell und konstant um. Gib vor allem am Anfang ganz langsam das Öl hinzu (sonst verbindet es sich nicht). Mach weiter, bis du das ganze Öl untergerührt hast. (Es kann gut sein, dass du zwischendurch mal Pause machen musst, weil dein Arm vom Rühren weh tut.) Gib anschließend Pfeffer, Zitronensaft und schwarzes Trüffelöl hinzu und verrühre alles gut miteinander.

Rühre ggf. noch ein frisches Kraut unter.
