Why you should bake our lemon cake without added sugar? There are many reasons for that. Why our lemon cake is healthier than conventional recipes!
We use five apples in the recipe. These are pureed, unpeeled. This makes the lemon cake, which can be baked in a 30 cm loaf pan, wonderfully juicy and rich in vitamins. We also don’t add sugar, but 2 tablespoons of erythritol (which is a sugar substitute) before baking the cake. But you can also leave this out. The cake still tastes sweet enough without erythritol. In addition, there is a lot of fiber from the chia seeds and the eggs make the cake richer in protein.
Juicy – healthy – naturally sweetened
Our erythritol cake recipe without added sugar mainly uses apples to sweeten it naturally. These and the chia seeds make our lemon cake healthy, among other things. In contrast to many other lemon cakes, this one is nice and juicy and ideal, for example, for visitors or a children’s birthday party. The lemon cake also tastes very fresh. For us it is definitely the best lemon cake in the world!

Lemon cake without added sugar

Prepare ingredients: apples, lemons
Grate the lemons and put the lemon peel in a small bowl. Halve and core the apples.
Prepare the butter mixture: butter, chia seeds, lemon zest
Put the stove on a low heat or level and add the piece of butter. Add the lemon zest and chia seeds. Remove the butter mixture from the heat once the butter has melted.
Mix the ingredients: apple, butter mixture, eggs, lemon juice, cream, butter vanilla flavor, erythritol, salt, baking powder, wheat flour
Put the apples, the butter mixture, the cream and the eggs in the blender and chop everything until a homogeneous mass is formed. Add the juice of half a lemon (for 1 cake or 6 servings) as well as butter vanilla flavoring, erythritol, salt and baking powder and mix everything together. Add the flour little by little, mixing constantly so that there are no lumps.
Greasing the loaf pan: Butter or spray for greasing
For example, grease your baking pan with butter so that the dough doesn't stick to the pan after baking.
Pour the dough into the loaf pan
Pour the dough into your ovenproof dish. Then lift it and gently swing it from side to side so that the dough is evenly distributed in the pan.
Bake lemon cake
Place the loaf pan in the oven at 330 degrees Fahrenheit for 45 minutes.
