Pecorino refers to a variety of Italian hard cheese made with sheep's milk. There are many different subspecies that are now also produced in other countries. We used Pecorino Stagionato for our Pecorino pasta. This has matured for over 3 months and therefore has a very mild, pleasant taste. If you want to use a tangier, more aromatic cheese in the recipe, you can simply use longer-aged (older) Pecorino.

We have already published some pasta recipes on our blog. Have you ever made pesto yourself? It tastes much fresher and more intense than from the supermarket. How about pesto calabrese, basil pesto or pesto rosso?
Remove the rind from the cheese and then grate it.
Bring water to a boil. As directed on the package leaflet, add salt to the water and cook the pasta in it.
Pluck the rosemary from the stem and chop it finely.
Peel the shrimps. Then heat a large pan. Add the oil and shrimp and fry for about 5 minutes. Remove the shrimp from the pan and set the pan aside for later.
Skim off 250 ml of pasta water. Gradually add 3/4 of the Pecorino cheese to the pasta water, stirring constantly with a whisk.
Add the rosemary, pepper and salt, pasta, cheese mixture and shrimp to the pan. Pull the separated cheese apart and stir it into the pasta.
Serve the pasta with the remaining Pecorino.
